Quick and tasty Caribbean Pumpkin and Black Bean Soup

  If you follow my blog you know that I’m not a cook.  I should clarify.  I cook for my family pretty much EVERY day, except on the weekends, during which blissful time my husband, who is ironically the REAL homemaker in our house takes the lead.  That being said, truly, I’m not a cook.

However, though the task falls to me most days, like the woman in one of my favorite ecards (below), I do it because I must.  I’m into organic food with fresh ingredients so that’s mostly what I make.  But I also LOVE it hen I find easy tasty recipes.  Like, as in, they take almost no time to prepare.  (Those are hands down my favorite!)

Since I’m always game to try out a new super simple recipe I thought maybe you would be too.  So I’m posting tonight’s dinner.  Caribbean Pumpkin and Black Bean Soup.  Okay, this one is mostly from a can, which is unusual in our house, but nonetheless satisfying. And also makes it oh so quick to whip up.  I discovered the recipe one day when we why do they want dinner every nighthad a plethora of garden pumpkin and oodles of black beans (canned).  This time of year, I usually make it just like the recipe says, straight from the cans.
If you’re looking for a tasty, and perhaps unusual meal that only takes a few minutes to prepare: this is a happy option.

P.S. It’s pictured here in our crock pot, but that is totally unnecessary.  You can do it on the stove top in a jiffy too!  I do this because I hate cooking between the hours of 4-6, here’s why.
